Here is a quick and easy recipe for a delicious treat without all the refined sugar and carbohydrates you usually find in store or cafe bought muffins. These can be made nut free which makes them perfect for kids lunchboxes. You can experiment with different fillings like mixed berries, apple and pear.
Banana and Blueberry Muffins
Ingredients
2 large bananas, mashed
1 cup spelt flour
1/2 cup desiccated coconut
1 teaspoon baking powder
3 eggs, free range
¼ cup coconut oil
¼ cup rice malt syrup
1 cup blueberries
Method
1. Preheat oven to 180°C.
2. In a large bowl, combine eggs, oil rice malt syrup & mashed bananas.
3. Add spelt flour, desiccated coconut & baking powder, combine well.
4. Fold through blueberries & spoon into lined muffin tins.
5. Bake for 30 – 35 minutes, until passes the skewer test.
